I had some mushrooms, a bag of spinach and some bell peppers looking lonely in my kitchen so I decided I’d make a pasta dish. It was my first time making a pasta bake, ever. I basically threw together what I thought would taste awesome, and I think something good happened. See what you think, and feel free to add whatever you desire. I made this on a whim, for a fresh dinner last week. I fell in love and ate the same thing the next day for lunch. Give it a try and add things that you love, there is a ton of room to play with this recipe.
Today is the day that I go through the refrigerator and see what I can come up with before anything spoils. I make meal plans every week and sometimes I end up not using all of the ingredients when it comes down to it, and sometimes these can add up to the tastiest meals of the week. I made one today that was so satisfying I wanted to share the wealth. I know salads are expected from a vegan kitchen, but I believe this one is a star.
Okay, so I pretty much blew my own mind with this one. I was brain storming the other day thinking about how my cheese always slides off of my burger. I thought about it and a spark happened in my noggin noodle. Put the cheese inside the patty. It will be delicious, surprising and it will keep my burger from sliding around. I then learned it’s already been done with beef patties.. so I wasn’t as smart as I thought I was. Still an awesome idea, though. It worked just like I had dreamed.
Today has been very dark and rainy. I was going to make some fresh veggie burgers but I felt lazy. I decided to make a taco salad with whatever I had lying around. It actually turned out seriously yummy. I made sure to scribble everything down this time. Many awesome recipes have been lost by me getting carried away and not documenting it as I go.
Whenever I make this, usually on Friday, it lasts the whole weekend. Pasta Salad has always been one of my favorite quick dishes. I’ve always thought it was delicious. I’ve always made it with at least a minimum of 5 vegetables, but this time I got carried away and just kept adding veggies. Turned out delicious.
