Light and Crisp Holiday Nut Brittle

I gave my immediate family 2 to 3 boxes each of nut brittle to enjoy this Christmas and I got nothing but praise, especially for the pecan flavor. This brittle is unique in a way that it is actually light and “airy” and not rock hard like the traditional brittle I have had my whole life. It doesn’t stick to your teeth or make you feel like you’re about to break a tooth off trying to bite into it. It’s also very easy because the whole batch can be made in about 5 minutes in the microwave, not 45 minutes over a hot stove with a candy thermometer.

Deep Dish Blackberry Blueberry Cobbler

I am planning a peach cobbler for my husband’s birthday (as well as some other secrets) coming up soon. This was the first cobbler I had ever made, and I was nervous.  I gave the simple crust a test run along with some lingering blackberries and blueberries I didn’t eat with my oatmeal last week. We were pleased and I bet you would be, too.

Creamy Squash Mac ‘n’ Cheese

Does anyone remember the sound that kraft mac used to make when you stirred it all around or took a bite? The squishy sound that you knew meant you were about to eat macaroni? This butternut mac is pretty much identical to the old stuff in a box that we all loved when we were 5… or 20 .. or you know, whatever.
