I had some mushrooms, a bag of spinach and some bell peppers looking lonely in my kitchen so I decided I’d make a pasta dish. It was my first time making a pasta bake, ever. I basically threw together what I thought would taste awesome, and I think something good happened. See what you think, and feel free to add whatever you desire. Lastly, this makes a ton of food and freezes perfectly. You’re welcome.
I think we all know by now that I love enchiladas. Every time I make them I do it a different way. This time I wanted to give the potato burrito a try, and it turned out delicious paired with my homemade salsa, my homemade cheese sauce, homemade enchilada sauce (all three recipes are inside this post) and some blue corn chips. This seriously makes a ton of food, so be prepared to not cook for a while after you make this, or be prepared to have a food baby because you can’t stop yourself from eating it all the first day.
I will be honest. I bought too much broccoli, I don’t know why I bought so much, but somehow I did. I had no idea what to do with it and I was tired of just eating it as a side dish. This is what happened, and I thought it was delicious and seriously filling. Hope you enjoy ~
When I was younger my mom made these huge meat balls that were easily one of my favorite meals that she ever created. Every time she cooked them I went nuts. She didn’t have to call me to dinner and beg me to eat, I was in the kitchen with a fork ready to go. I haven’t had them in years, and I never ate any other meat balls besides her’s. I was such a loyal child. For my birthday this year I wanted to recreate her old recipe. I also wanted it in a sandwich, because I never ever got to eat a meat ball marinara, and well, it’s too late to order one up now. What I came up with worked incredibly well the first time, so I thought I’d go ahead and share.
I had never tried poblano peppers before I made this. Isn’t that nuts? I don’t like messing with peppers very often, do to the simple fact that you can easily burn the hell out of yourself if you get the juice or seeds under your nails and on your hands. I am always very cautious with this, and please do yourself a favor and be very aware. The result is delicious and fresh tasting whether you choose to use bell peppers or poblano.
Sometimes I miss when my mom and I used to make turkey wraps for my school lunches. How easy it was, and how satisfying. As a matter of fact, I missed it so much that I made this equivalent vegan version, with no effort at all, really.
When my husband and I were at the health store and a bag of soy curls caught his eye, I immediately wanted to make fajitas or quesadillas … I guess we know which one I chose, and I enjoyed every second. They’re awesome to cook with and have a really pleasant texture. To top it all off, the smell .. it’s overwhelmingly exciting.
