I have made a total of around 5 or 6 different Shepherd’s Pie recipes over the last year. This is the first one where I actually said ” Wow, this is the one. ” So here you go. I was able to make 3 individual pot pies, and an 11 x 8 ” sized pie I believe. They came out gorgeous, so I will probably make more next week, honestly.
I’m an awful person. I haven’t posted in weeks, and when I do, I post all of my holiday dishes the day after Christmas. I do have some good news, though. I indulged in all of the dishes yesterday and they were awesome. Even more awesome than I had planned. I spent around two weeks tweaking and buying fresh ingredients. At the end I wish I could have shared it with my family, but unfortunately a snow storm hit, so maybe next year. I hope everyone here had a good holiday and good food ~
Honestly, I never ate many omelets. I never liked eggs to an extent that I would cook them on my own time. I would eat one every now and again, if it was available, but that’s about it. I was browsing the ‘net when I saw the idea for a vegan omelet. Why not? If anything I did it just as a ” HA HA ” to meat eaters, showing off our vegan breakfast rights and how delicious they can be. The best part is… you can stuff this thing with anything you have. Every time I make them, I cram them with a different thing.
I found this interesting blog on Reddit a while back. I took one look and decided then and there that I would make and devour this carrot cake. Unfortunately, I got sick the next day and it lasted for two weeks. As soon as I felt up to it though, I made this amazing cake and enjoyed it until the last bite.
So, as always I saw my awesome momma for Thanksgiving this year, and as always there was a pecan pie. On the way home it was all I could think about. How come I didn’t have one and how would I make it a reality? I also wanted chocolate, because I can. So I brainstormed on the drive home and came up with an idea. Now, I just have to decide if I want to make a carrot cake for Christmas, or this delicious brainchild…
