I am a huge fan of brownie in a mug, so I thought I’d expand a little. This makes a great, quick dessert that you don’t have to invest hardly any time into. Plus, mugs are fun to eat out of, so don’t blame me if you start eating out of a mug full time.
Ingredients :
- 1 TBSP flax mill + 3 TBSP water (equivalent to 1 egg)
- 5 TBSP flour
- 3-4 TBSP sugar
- 1/8 tsp. baking powder
- 5 TBSP almond or soy milk
- 1 TBSP canola oil
- dash of salt
- drop of almond or vanilla extract
To Make :
Start off by mixing your flax mill egg substitute with water and letting it sit for 2 or 3 minutes while you lightly spray your mugs with non-stick oil and get your other ingredients together.
Next, in a small bowl combine flax egg, flour, sugar, baking powder, milk, oil, salt and extracts together until just combined.
Pour the batter evenly between two mugs. Microwave the mugs one at a time for 1.5 minutes, and possibly up to an additional 15-30 seconds depending on your microwave, or until the center is cooked, not “wet” or “raw” looking.
I serve this little cake with all kinds of fruit, topped with a scoop of almond or coconut ice cream. Sometimes, I even dump it into a bowl and smother it with heated fruit, along with some chopped pecans on top. You can serve this cake up however you feel ~
