I’m an awful person. I haven’t posted in weeks, and when I do, I post all of my holiday dishes the day after Christmas. I do have some good news, though. I indulged in all of the dishes yesterday and they were awesome. Even more awesome than I had planned. I spent around two weeks tweaking and buying fresh ingredients. At the end I wish I could have shared it with my family, but unfortunately a snow storm hit, so maybe next year. I hope everyone here had a good holiday and good food ~
Ingredients :
- 1/3 cup raisins
- 1 apple, cored and cut into bite size pieces
- 1/3 cup chopped walnuts
- 1/2 cup celery, sliced thin
- 3/4 cup red or green grapes, halved (I used red)
- 1/4 cup vegenaise
- 1/4 cup plain soy yogurt, or more vegenaise
- 2 Tablespoons agave syrup (optional)
To Make :
Plump your raisins in a bowl of cold water and drain after 5 minutes. Cut the apple, grapes, celery, and walnuts.
Mix vegenaise, yogurt (if using) and agave (if using) in a medium bowl with all other ingredients. Chill for at least 30 minutes before serving, refrigerate promptly after serving.
