For this recipe, I used my regular old pancake recipe and just added a simple caramel sauce with walnuts. I think I used a small amount of pancake syrup along with the caramel, but next time I won’t. I bet blueberries would be awesome, too.
Ingredients :
- 1 recipe for fluffy pancakes
- handful of walnuts
- 2 cups of strawberries, heated in a pan with agave syrup until soft
- 2 bananas
- 1 recipe caramel sauce :
Caramel Sauce :
- 1 c. packed brown sugar
- 1/2 cup full fat coconut milk, chilled
- 4 TBSP Earth Balance
- pinch of salt
- 1 TBSP vanilla extract
To Make :
Mix the brown sugar, coconut milk, Earth balance and salt in a saucepan over medium-low heat. Whisk gently and let cook for 5 to 7 minutes, until it thickens. Add vanilla and cook another minute to further thicken. Drizzle hot over pancakes and serve.
