Eggplant Patties

Before the idea of becoming vegan came true, I never ate eggplant. I thought it was too complicated and bitter. Well, I cooked it once and fell in love. You can do a whole menu of tasty eggplant dishes, and most of them are super easy. That said, I made this simple recipe two nights ago when I made some coconut curry, and it paired so well I’ll probably make it again next week.

 

 

Ingredients :

 

  • 1 small eggplant, peeled and diced small
  • 1/2 c water
  • 1 tbsp fresh lemon juice
  • 1 tsp chili-garlic sauce
  • 1/2 c flour
  • 1 1/2 tsp coriander
  • 3/4 tsp cumin
  • 1/2 tsp baking powder
  • couple shakes of garlic salt
  • oil for frying

To Make :

 

Peel and chop the eggplant. Bring 1/2 water to a boil in a saucepan. Add eggplant and lemon juice and switch the heat to low, let cook for about 10 minutes, or until eggplant is very soft.

 

Drain and excess water and squeeze any water out of the eggplant. Now in a medium bowl mix together all remaining ingredients, throw in the eggplant and toss to coat. Shape into small patties and fry until golden brown.

 

Serve hot and enjoy !
