Breakfast Cake Cinnamon Rolls with Orange Vanilla Frosting

I very rarely ‘cook’ something for breakfast. Usually it’s just oatmeal or fruit and granola, or a little of both if I’m feeling nice. Today I woke up and actually wanted to cook something that we could enjoy for a nice brunch. This is what happened ..



Ingredients for Roll Cake Dough :


  • 3 ½  cups all purpose flour, or whole wheat
  • 1 TBSP baking powder
  • 3 tsp baking soda
  • 1 tsp salt
  • 5 TBSP vegan butter, melted
  • 1 cup almond milk
  • 1/3 cup orange juice
  • 1 tsp vanilla extract
  • more flour for kneading purposes


Ingredients for roll cake filling :


  • 3/4 cup brown sugar
  • 3 TBSP vegan butter, melted
  • sprinkled ground cinnamon to coat top of dough
  • sprinkled ground nutmeg to coat top of dough
  • shake of ground cloves (optional)
  • 1 cup of chopped walnuts


Ingredients for roll cake pre-bake drizzle :


  • 3 TBSP crushed walnuts
  • 3 TBSP vegan butter, melted
  • 3 TBSP brown sugar
  • 1 tsp agave or maple syrup

Ingredients for orange frosting :


  • 1 cup confectioner’s sugar
  • 3 TBSP orange juice
  • dash of vanilla extract


To Make : 


Preheat your oven to 375 and grease a round pan. I used a 9″ pie pan.


Mix together the dry ingredients for your cake dough (flour, baking powder, salt and baking soda) Add all the wet ingredients (butter, orange juice, vanilla and milk) and mix well until a dough forms. Knead with your hands until combined well and add more flour or milk as needed to reach a soft dough-y consistency. Lay the dough onto a floured surface and roll into a 1/2 ” thick rectangle.


Cover the top of the dough with 3 TBSP melted butter and sprinkle with cinnamon until covered, and nutmeg until covered. If you chose to add the cloves, sprinkle some on now as well. Add your brown sugar and walnuts and cover well. Press into the dough with your hand lightly and evenly. (So it won’t all fall out when you roll it up and cut it)


Gently and tightly roll the dough to make a long round tube like roll. Cut into 1″ thick rolls. Tightly place into your prepared pan.



Mix together your pre-bake drizzle ingredients and evenly drizzle it over the rolls in the pan. Bake for 30 minutes on 375.


While it’s baking, mix together your frosting ingredients with a whisk. Set aside until the rolls are done, then drizzle the orange frosting over them before eating.
