I made about ten or eleven seitan sausages yesterday in my steamer and used them to make some delicious hot dogs. Today I had four left over and decided to do something different. I found some BBQ sauce and a stray onion and decided that would be enough. I also found a box of yellow rice that had fallen into the depths of the pantry to await my rescue. Today was it’s day to shine and I thought it went hand and hand with this BBQ sausage and broccoli. Quite filling on a rainy day, too.
For this recipe I made my own seitan sausages, of course if you don’t have time you can buy any vegan sausages you’d like.
I found my recipe for seitan sausages on The Post Punk Kitchen. It was the first vegan meal I made, and it was so delicious I made it a go to meal because of how easy it is. You can use the sausages for soup, hot dogs, pizza, BBQ and anything else you can think of. These are very handy to have on hand in the freezer if you ever need something quick and versatile. And lastly, I love them because they are SO CHEAP to make.
- 4 small seitan sausages, cut into half moon chunks
- 1 small yellow onion
- 2 cloves of garlic
- 1 TBSP liquid smoke
- 1 TBSP olive oil
- 1/2 cup of vegan BBQ sauce you are fond of
- 1 box vegan yellow rice mix
- 1 cup baked broccoli
- sprinkle of sea salt
To Make :
Preheat your oven to 350, to bake the broccoli. Toss broccoli in olive oil and sprinkle with sea salt. Bake for 20 minutes, then remove and set aside.
Cook rice according to directions.
Chop your seitan sausages, onion and garlic. Heat a pan over medium heat with 1 TBSP olive oil. Toss sausages, onion and garlic in liquid smoke and add to pan. Let cook for 5 minutes until onions are soft, or until browned to your liking. Add BBQ sauce and mix well. Lower the heat to low and let simmer for 10 minutes, stirring often. Remove from heat.
Make a plate and enjoy !
